Christmas leftovers usually last pretty well, so we’ve put together some of our favourite ways to use, reinvent and enjoy the ham, turkey, roasted vegies and everything in between, after December 25!

- Chockers after Chrissy lunch? Leftover salads make the perfect light Christmas dinner or a side salad on Boxing Day.
- Ham or roasted vegetables are delish in fritters, frittatas and omelettes for brekkie.
- Leftover turkey is great in pastas, salads, or who can beat a turkey and cranberry sandwich?! Toasted on a sandwich press takes it to another level.
- Christmas ham makes a tasty addition to a batch of savoury muffins or a quiche.
Food Safety 101
Keep it cold
- Put foods that need to be kept cold in the fridge straight away.
- Meant to be in the fridge and has been left out for over two hours? Toss it!
Keep it clean
- Wash those hands! And dry them thoroughly before preparing any food.
- Store meats in the fridge on the lower shelf so meat juices don’t drip onto other foods.
- Raw and cooked foods don’t mingle. Separate them and use separate utensils for each.
Keep it hot
- Cook or reheat foods to at least 60 degrees to kill any bacteria.
- Be thorough. Make sure there’s no pink left in cooked meats like mince or sausages.
- Look for clear juices before serving chicken. Pink juice? It’s not cooked properly.

The 12WBT Christmas Leftovers Frittata
- 2 Serves
- 10 min prep time
- 20 min cooking
- 339 Cal / serve
- 3 Cage Free Eggs (177g), Whole eggs
- 2 Cage Free Eggs (62g), Egg whites only
- 70g Christmas Ham, chopped
- 70g Christmas veggies, chopped
- 40g Reduced Fat Cheddar, grated
- 1 Tablespoon Chives (2g), finely chopped
- 1g Olive Oil Spray
- 60g Avocado, diced
- 1 Tablespoon Flat Leaf Parsley (2g), roughly chopped
- Whisk eggs and egg whites together.
- Add ham, capsicum, cheese, and half the chives and stir to combine.
- Spray a small (8 inch diameter) nontick frypan with oil and heat over low heat.
- Add egg mixture, cover and cook on low heat for 10 minutes or until almost set.
- Meanwhile, combine avocado, remaining chives, and parsley.
- Season with freshly ground black pepper.
- Preheat grill to high. Grill top of frittata for 5 minutes, or until golden, puffed and set.
- Cut into wedges and serve with avocado salad.
